Canvas is usually described either in grams per square metre (GSM) or in ounces per square yard (oz). One ounce per square yard is roughly 34 GSM, so a 10 oz canvas is about 340 GSM. The higher the number, the thicker and stiffer the bag, the better it stands up on a shelf and the more it costs.
